An extra virgin olive oil with medium/high green olive fruitiness, a large array of plant aromas and hints of green grass, tomato plant, artichoke and green banana.

A very special signature olive oil, which is balanced and will leave no-one indifferent.

On the palate, it has a distinct green almond flavour, light in sensation and sweet in attack, perfectly accompanied by a pronounced bitterness and spiciness. All this, in a balanced combination of aromas and flavours.

TASTING NOTE

Balanced in its profile, ripe olive fruitiness identifiable on the nose and palate, with a large array of secondary plant aromas, such as apple and banana, and hints of green grass, tomato and fennel.

On the palate, it is nutty with a slight sweetness and a final astringency that does not interfere with the oil’s profile.

Overall, it is a very balanced, harmonious oil with the distinct hint of sweetness characteristic of the varieties used.

We select the best oils of the Arbequina, Arbosana and Koro- neiki varieties with the aim of taking the essence of each one.
Our mill master carries out various coupages depending on the attributes of each variety to choose the one that best expresses the particular features of the vintage, which change every year. The result is a very elegant combination of green notes, riper notes and the sweetness, bitterness and spiciness present in each of the varieties.

Our blend of the Arbequina, Arbosana and Koroneiki varieties has medium notes of sweet, bitter and spicy, a characteristic that expands the range of pairings of this complex oil, these characteristics give it the ability to accompany cured cheeses, baked meats or fish blues, but also to marinate fish or accompany pasta dishes.
